Katie’s Peach Pancakes

There’s no better way to start a slow summer morning than with a big plate of fluffy pancakes. My new favorite twist for the season is topping them with the fruit that embodies summer for me – peaches.
What You’ll Need:
- 1 1/2 cups all-purpose flour
- 3 1/2 teaspoons baking powder
- 1 tablespoon granulated sugar
- 1/4 teaspoon salt
- 1 1/4 cups milk
- 3 tablespoons butter, melted
- 1 egg
- 1 cup sliced peaches
- 2 tablespoons sugar (for caramelizing the peaches)
Here’s How To Make Them:
Mix the Dry Ingredients
In a large bowl, sift together the flour, baking powder, sugar, and salt.
Add the Wet Ingredients
Pour in the milk, melted butter, and egg. Mix until the batter is smooth.
Caramelize the Peaches
In a saucepan, combine the chopped peaches and 2 tablespoons of sugar. Cook over medium heat until the peaches soften and the sugar caramelizes about 5-7 minutes. Set aside to cool slightly.
Cook the Pancakes: Heat a lightly buttered pan over medium-high heat. Pour 1/4 cup of batter per pancake onto the pan. Cook until bubbles form on the surface and the edges look dry, about 2-3 minutes. Flip and cook until the other side is golden brown.
Serve and Enjoy: Once all your pancakes are cooked, top them with the caramelized peaches. Enjoy!
